What is Kamut?

Khorasan wheat, whose trademark is KAMUT®, is a modern drum wheat’s ancestor which is produced through bio agriculture. It is source of high quality proteins, vitamins and minerals and its taste is delicious.
It is considered one of the most complete cereals considering a nutritional point of view. It is more digestible than “common” or “modern” wheat. These properties are due to the fact that KAMUT® hasn’t been subject to hybridisation, keeping its original nutritional characteristics. KAMUT® is more tolerated than modern wheat by people that are hypersensitive to wheat. It is important to clarify that KAMUT® has gluten and it is not appropriate for celiacs. It is a cereal that is a source of proteins (20%-40%), that is higher than other common wheats. The high percentage of lipid makes it precious for the nutrition and the energy potential. Also the content of minerals like magnesium and zinc is higher. What makes KAMUT® particular important is the high content of selenium. It is necessary for cellular metabolism, its action reduces the creation of free radical. As it is for the other types of wheat, cholesterol is absent. KAMUT® is appropriate for athletes, active people, children and seniors. All doughs in which you use KAMUT® are more digestible. KAMUT® flour is appropriate for many recipes, for bread, pizza, biscuits and cakes, but also to make fresh pasta and potato gnocchi.
