Spicy Plumcake

115 g of flour for cakes Molino Rossetto
110 g di rye flour Molino Rossetto
2 eggs
180 g of acacia honey
90 g of vegetable oil
80 g of grains of sugar
100 g of caffè lungo
4 cardamom cerries
1/2 pack of gluten free yeast for cakes Molino Rossetto
1 spoon of bicarbonate
50 g of orange peel
1 pack of gluten free aroma of spices Molino Rossetto
1/2 spoon of powder nutmeg
1/2 spoon of powder cloves
6 chopped anise seeds


Put honey, oil, sugar, eggs, spices and orange peel in a casserole. Make caffè lungo and let 4 cardamom berries in infusion for 10-15 minutes. Start to add coffee and flour alternating them, eithout forming lumps. Mix everything until it becomes creamy. Add bicarbonate and yeast and mix. Turn the oven on at 170° and cook for 45-50 minutes. Pour in a plumcake mold covered with some oven paper and some vegetable oil.
