150 g of Molino Rossetto oat flour
30 g of corn starch
1 case of Molino Rossetto baking powder
130 g of sugar
30 ml of extra virgin olive oil
100 g of yogurt
1 pinch of salt
Peel and cut some peaches.
In a stand mixer blend all the ingredients. If you have not a stand mixer, in a bowl blend eggs and 100 g of sugar with an electric beater, add yogurt, flour, cornstarch and baking powder, then add oil, lemon zest, salt and blend to low speed until the batter will be smooth and uniform. Add a part of peaches and blend with a spoon.
Grease with butter and flour a 20-22 cm diameter mould and pour the batter. Add the remaining peaches and 30 g of sugar.
Bake in fan-assisted oven to 165°C for 30 minutes.
