  • Mushrooms' quiche


For a mold of 24 cm of diameter
350 g di organic flour type 00 Molino Rossetto
180 g of pieces of cold butter
enough cold water
a pince of salt
300 g of champignon
70 g of butter
100 g of cooked ham
300 g of cottage cheese
2 eggs
75 g of grated parmesan
enough salt and pepper


Put flour, add a pince of salt and mix it with some salt and butter until you obtain a crumbled compound. Add cold water and knead the dough until it becomes smooth and homogenous. Form a ball, envolve it in some film and put it in the fridge for 30 minutes. Wash champignon and cook them in a pot with 70 g of butter for 5 minutes. Put some salt and some pepper. Put mushrooms in a bowl and add chopped cooked ham. In another bowl mix whole eggs with cottage cheese and half of the grated parmesan. Add mushrooms to the dough and  mix well.cover the mold with shortcrust and distribute the mushrooms and cottage cheese compound. Put the remaining parmesan cook in the oven at 200° for 40 minutes, until the quiche is golden.
