Plant-based Stew
PREPARATION
1)In a saucepan over medium heat, soak the BIGOOD plant-based bites in the hot broth you previously prepared and brought to a boil. Let them soak for 3 minutes.
2)Turn off the heat and let them rest for 5 minutes. Once cooled, remove the bites from the broth, squeeze out the excess liquid, and set them aside (keep the broth).
3)Meanwhile, in a pan, sauté the chopped vegetables with oil and rosemary for about 3 minutes, then add the plant-based bites.
4)Add the tomato purée and the tomato paste, and cook over low heat for about 5 minutes. Add about 100 ml of the reserved broth to keep the stew from drying out.
5)At the end of cooking, season with salt and pepper to taste.
